Ingredients: 

  • 1 Tbsp olive oil 
  • 3 zucchinis, cut into 1/4 inch thick rounds 
  • Kosher salt and freshly ground black pepper, to taste 
  • 1/3 cup marinara sauce  
  • 1/2 cup reduced fat, finely grated mozzarella cheese  
  • 1/4 cup turkey pepperonis  
  • 1 Tbsp Italian seasoning  

Directions: 

  1. Preheat Your Oven

Start by preheating your oven to broil. This high heat will help melt the cheese and give your zucchini rounds a deliciously crisp top. 

  1. Prepare the Zucchini

Heat the olive oil in a large skillet over medium-high heat. While the skillet heats up, slice your zucchini into 1/4-inch thick rounds. Working in batches, add the zucchini slices to the skillet.
